Stine Jacobsen graduated from The Royal Veterinary and Agricultural University, Denmark, in 1998, and received her PhD degree from the same institution in 2003, after having spent a year as Marie Curie stipend at Utrecht University in The Netherlands. 

Stine Jacobsen completed a surgical residency and became diplomate of ECVS in 2016. She has a keen interest in many aspects of equine surgery, orthopedics and emergency medicine, including basic surgical techniques, diagnosis and management of orthopedic disease, wound management, abdominal surgery, fracture repair, and joint diseases. 

Her research interests revolve around joint disease (osteoarthritis, septic arthritis), fracture repair, abdominal disease, and soft tissue surgery in general. Her most important contribution to the research field is, however, her long-term research into the equine inflammatory response, most notably her work on the acute phase protein serum amyloid A and its use in equine medicine and surgery. She has published more than 100 research papers and has authored or co-authored more than 70 conference contributions on these subjects.

Stine Jacobsen is passionate about pre- and post-graduate education and has been invited more than 40 times to provide national and international lectures in conferences and CPD courses. She has supervised more than 15 PhD students, post docs, and surgical residents.
